I agree on keeping beginner classes simple.
 
There is only so much they'll retain, and there's only so much you can teach.  Much of beekeeping is learned, not taught.  
 
And then there are so many variables with given sites, weather, etc.  My biggest frustration with these classes is giving the students a generalized, uniform expectation of what will take place.  Then they'll come back and say, "But you said...."
 
I thought the best I could really do was to give them enough courage to get started and enough knowledge to order some supplies.  Beyond that, on-site mentoring is a great teacher.  But it takes a lot of time.
