All my fall crop has crystallized. Instead of getting on the "reliquifying by heating" merry-go-round, I will market as is.

What causes granulation? :
 

 Temperature 
 Moisture content
 Pollen?
 Other particles to be filtered out?
 Ratio of glucose to fructose in certain nectars , like aster?
