My experience with granulated /crystalized honey is the bees DO care if it is granulated; they do not readily uncap and reuse crystalized honey in frames.  If you have crystalized supers/frames of honey put them on the bottom of the hive, they will clear it out (a wise beekeeper shared this with me) As for white sugar, they do not care what form it is in they will eat it.
