Unless by Northeast you mean north of the arctic circle, why do you need two
medium supers? There are many people in the northeast who overwinter
successfully
in a single deep.

In any case, if the honey is for the bees, you don't need to remove the supers
to use OA. The supers only need to come off if your going to use the honey
for human consumption.

Last I checked the bees don't care if it's granulated. Ours are fine
with a solid
block of sugar, which is pretty much what you get with mountain camp feeding
once it's absorbed hive moisture.
