In NYC, my refractometer is my friend and constant companion this time of year.
I'm not going to wait for the bees to cap, just so I can uncap, but I'll certainly wait for them to get the moisture down.

My painfully expensive and exquisitely crafted Atago refractometer, purchased at the insistence of the late Ann Harmon, took a tragic one-way trip down a flight of stairs decades ago, and was replaced by one of the cheap ones fabricated from pure Chineseum, which has survived to date, and has proved no less accurate. 

So, not just yet - Maybe end of June.
