 I am also in Upstate NY. There are some beautiful, capped frames, when I checked today. Nearly white! Some fine honey.
However, it is a small percentage. The supers are heavy, but the majority of frames are uncapped.
I am fighting temptation. Last year I had a similar situation. I extracted in June, only to find I had moisture levels 22+ percent. That led to an elaborate drying process just to keep it from spoiling. I was desperate.
Just an  fyi: I did it by placing 5gal spout buckets, three feet in the air, in my little greenhouse. 90+ degrees. A thread trickle took two hours to empty the bucket. A small fan was blowing on that thread just enough to bend it, without it leaving the catch pail. Moisture dropped to 16%.
