I have a degree in Zoology, which has a long o, and I live in Missoula, pronounced Mis zoo la, like in zoo.
Varroosis has synonyms, including Varrosis (used in at least one 2019 presentation at Apimondia in 2019, and varroasis) and varroasis.
We commonly use nosemosis, not nosemoosis. 

My preference for consistency would be varrosis.
But, I tend to pronounce varroa   as varro a;  whereas I've found it pronounced online as varru.
