This review says fat bodies in insects serve many of the same functions as the liver in higher animals. ie metabolism, energy storage and release, contribute to making hemolymph, some hormonal activities. While not specific to bees a google scholar search shows thousands of technical papers on fat bodies in various insects.

Question about the fat bodies in
bees.
Sammy came to our club last summer,
and his talk was impressive. I know
that
varroa feeding on fat bodies is a game changer, but can
in bees? Do they help break down toxins,
too?
