Bee World, 72:2, 60-73, DOI: 10.1080/0005772X.1991.11099080I wonder whether that is still true. Here in the UK we have seen a shift over recent years from 50:50 clear to set in the past to probably 75:25 now. I suspect that it is due to TV cookery programmes where they add clear honey to dishes.
