I don't know about pollens, but the protein and starch values in grains
certainly change during drought and/or other plant stressors as related to
commercial feeding to livestock where these factors are monitored closely
due the potential for significant financial impact. Most amino acid values
will decrease during drought, but the ratios of essential amino acids
relative to lysine do not change significantly within a plant species (major
grains anyway).
