Actually, normal smoke appears to "stone" the bees somewhat. They become docile, and _very hungry_. But check the archives for nitrous oxide. You can really knock them out with it. There are other ways to knock out bees as well but one has to be careful. You can easily harm or even kill the colony. At the very least, make them vulnerable to being robbed out by other hives.
