Wow, hang on a second. I highly advise a trip to central Europe to change  
your mind. Plenty of fantastic pies made with rhubarb during the summer  
months. Back in the old country my mother used to (and still does when I  
visit) make pancakes with thinly sliced rhubarb mixed in. Fresh sour cream  
and raw honey poured on top, in a word - heaven!
