The attached photo shows the three colors of honey I extracted this month. At left is probably at least partly black locust, as there were a few of them blooming in the area. Middle is about what I normally get this time of year.
At right is from the bees I placed on a blackberry farm. It's very sweet, kind of caramely with a little fruitiness. And what's weird is that those same colonies made this last September, but in June of this year! I've never tasted honeydew, but that was my working theory before I took it to a club meeting the other night and asked around, and one of the old-timers suggested blackberry. I told him they're on a blackberry farm, but every place I search online tells me that blackberry is a light, mild honey.
It's the second year the bees have been there, but last year the berries didn't bloom, at least not in the spring, due to the brutal winter.
Any ideas?
