Jimmy asked:

"I guess my question is, should I keep the sugar syrup warm or keep it
cool to prevent the mold.."

I guess you're not a home brewer, Jimmy. Moulds (especially yeast) will
thrive, prosper and multiply at such temperatures. Have you thought of
using your cabinet for making mead, metheglin, honey beer or cyser when
not in use for other things?

Chris
