I find this very interesting. It must be influenced by variety or soil
conditions. I've had the experience of producing a lot of nearly pure
alfalfa honey over the years, in four distinct regions of our province
and all I've seen is a water white honey, which will set very creamy. I
started my beekeeping in an area were the gophers packed a bag lunch in
summer to go from hole to hole and I have never experienced this.
