The reason for acidifying the water is to neutralise lime. If you have soft
water then you do not need acid; however, if you have hard water, i.e with
lime in it, then boiling wax in the hard water will cause the wax to react
with the lime to produce a soap - ruining the wax. By adding acid the wax
is protected from reacting with the lime in the water.
