This is one of the reasons I got back into beekeeping. I have been a type 1 insulin dependent diabetic for 40 years. I have found that I can use substantially more honey as a sweetener than if I use sugar with out adversely affecting my blood sugar.
I seem to get an even better effect when I combine the 2. I read on the National Honey board website that honey boosts the sweetness of table sugar and started using it that way too.
Since then I have been able to cook and sweeten foods with less sugar and honey than before.
