I liked Peter's info a lot, but it's true that the numbers are far too
imprecise to really know the quantity of the bee-added enzyme. (And it
really doesn't matter; this is all an intellectual exercise for a very
Orthodox rabbi interested in bees and myself). I agree that it's smaller
than .8%.
My 2008 Hive and the Honey Bee gives a lot of info about enzymes, but not
their quantity in honey. Of course, it's a big book, and I may have missed
it!
