I bake a sweet braided egg bread called challah and use honey exclusively as the sweetener. Each recipe (which bakes 3 loaves) uses .75 cups of honey mixed with .75 cups of water.
I wasn't getting the rise that I wanted and started putting approx. 3 ml of white vinegar into the dough. The additional acidity seems to make the yeast quite happy, and I now get a fantastic rise, even with all that honey.
