You make a good point, Jeffrey. Make a good quality product at reasonable cost available to your customer and she will buy it. At least one pound per person annually according to what I hear.
One of the things that I remember from college was a statement from our marketing class. Find a need and fill it and you will be a success. You may have identified a need (market) and are able to fill it. There are a few honey packers who are getting into the "Raw" honey packing and selling business. They seem to be willing to pay more for the honey than the other packers. Maybe the big guys should follow suit and start a "Raw" honey line. I put raw in quotes because comb honey to me is the rawest honey available. IMO.
