In the thread on wintering small colonies Peter Edwards suggested using fondant, and gave some links to webpages on using fondant, and what fondant is.

If I understand correctly, the fondant is "candied" at a temperature higher than boiling.  But I have always thought that scorched honey from a wax melter was bad for bees because at that temperature some sugar is caramelized and this is hard on the bees, especially in winter when they cannot fly regularly.

What am I misunderstanding here?
