We have these also.  Ann is right - you just push the let-down button again and it returns to the mom's previous highest comfort level of stimulation.  When it switches to expression mode, either by time or by mom's pushing the "let=down" button, it gradually ramps up every 4 seconds. Mom can then turn it on up if desired to highest level of comfort.  When someone is engorged, it seems to work better if larger flanges are used and stimulation mode is repeated frequently.  I also find it works well to do reverse pressure softening and/or areolar compression every few minutes.  See Jean Cotterman's posts in the archives for more information.  ON the PIS pump - since we have a helpline here that is called by moms for free throughout their lactation cycle, we hear stuff later on.  An interesting problem is that after 4-5 months, moms will report delayed let-down with pumping at work.  We've found that the Soffit flanges can really help with that.  So don't forget those flanges when using any of the M pumps.  They also work well with engorgement SOMETIMES.  All of this to reiterate the importance of an individual working with an individual to customize their lactation care.  A cookbook approach is not appropriate when dealing with human beings.  Cookbooks are for chemical equations and recipes.  I am such a big fan of research and evidence because it gives a physiological/biological/chemical/psychological/social foundation or platform from which we can make our own discoveries as to what works.
Example here, no advice solicited, just ruminating:   I just got a good look inside my 11 week old granddaughter's mouth.  I saw her at birth, nice flat palate, good tongue extension, taught mom self-attachment and hands-free breastfeeding (great for inverted nipples and G size breasts!).  Yesterday I see a palate as deep as a walnut, poor suck, no tongue-cupping, can't bottle-feed (mom was detained).  She has to be pulled together to flex her arms in, likes to suck her thumb when her arms are pulled in for her.  She's happy, gaining weight, content, but nurses constantly with very liquid stools.  Mom pumps 8 ounces each breast when she pumps and nurses completely on demand.  Baby has had no bottles or formula from birth.  Mom has 4 other children to care for. Do I want to fix this?  According to Dr. Palmer, maybe.  But not at the risk of messing with the breastfeeding relationship!

Jaye,
We just updated our Symphony pumps with the new 2.0 card and I believe that
you no longer need to turn the pump off to get to the stimulation phase you
just push the "expression" button and it returns to the stimulation phase
and remembers the suction settings-very cool (I think).
