I believe it all depends on what is in the contract.  It's possible to
license a work (like a book), giving only limited rights and retaining
the copyright.  It's probably lots harder to get someone interested
though, than if you are willing to sign it all over.  If you've signed
it all over to the publishing company, then they are free to enter a
contract with company z to print a special version for them.
