The LLLI website has several articles on dealing with a strong
let-down/oversupply:

Sharing resources like this can reassure the mother that she's not the
only one who has worked through such difficulties. And having something
written down is useful, since a mother already under stress might not be
ready to absorb all the information you have in one conversation.

It might be helpful to remind her that the baby arrived early in a
stressful birth, and not on her own timetable -- she might have been
on-track to be a 42-week baby. She's possibly not as organized in her
suck/swallow/breathe rhythm as she will be in a few weeks, when she may
eagerly handle that bountiful supply. It's a little early to take
measures on an "oversupply," beyond the "finish the first breast first"
suggestion. since the early growth spurts and the easing-off of the
initial fullness often bring matters into balance.

Good luck in your work (and on those seven breastfed children, too --
impressive!)
