This is a good observation and comment to make.

This is probably because the organisms that could cause food poisoning in
sushi or raw eggs in the US are not a threat in Japan, or in other parts of
the world for that matter. A friend of mine tells me of her college roommate
who visited Eastern Europe. There it is common to leave food out of the
refrigerator and it will not spoil. She insisted on leaving food out here in
the US, but the food would spoil quickly. There are several possible reasons
for this, but that would be off topic.
