A short article on archaeo-hazards appeared in "Federal Archeology"
Vol. 8 No. 2, Summer 1995.  Tularemia is a disease mentioned in the
handling of carcasses (how old, I don't know).  Carol Ellick, who put
together a workshop on safety at a SAA meeting is cited as a source and
her phone number is given as (520) 721-4309.  She may have other data for
you.  From what I've read, latex gloves and a dust mask should take care of
99% of microbial evils - these are cheap and easy.  Maybe better safe than
stupid.
 
Lastly, it seems like forensic anthropologists would be the most logical
sources for the information you seek.
