Heidi,
I have had quite a few problems with yeast through the years.  ( I can
remember going around with a purple mouth as a kid)
When I get yeast, in the mouth (thrush), I always first experience an
unpleasant, metalic type of taste. Also, eating yeast bread while
suffering from a yeast infection can cause gas and bloating.  I'm not
saying that this mom couldn't be suffering from celiac, just that her
symptoms could also be just from the yeast.
