I've actually swung back to "emptying" - because it is indeed more
like that than we used to think, because "emptying" is important...
and because, like you, I can't think of a simpler way to say it.  My
catch phrase these days seems to be something like "we make milk
fastest when we're the most empty, and we make milk the most slowly
when we're the most full."

Diane W, suspecting there's a better word out there but not having
found it...
