Here are some of my favourite Chopin works and recordings.

Waltzes - Dinu Lipatti (they may be old, but they'll never be surpassed)
Polonaises - Maurizio Pollini
Nocturnes - Artur Rubinstein
Piano Concerto no. 1 - Maurizio Pollini
