Just a few hints about eliminating hidden dairy.
Foods that are marked Kosher and Pareve
have no milk or cheese or whey, yogurt etc. in them.
Many national brands are marked and available all over. There are also
some specialty stores in major metropolitan areas. They
are generally free of all dairy. In some limited cases they may have
caseinate, although this is rare. It is much easier to scan the outside
of the labels for one word and then only have these products to check.
Also "dairy" means milk and all milk products. It does not include
eggs. So if you are trying to eliminate eggs as well , or not to, saying
"dairy free" is sometimes unclear.
Health food stores and some supermarkets will also have vegan
foods that are free of any and all animal products, including all dairy
and eggs. I don't know about caseinates in these foods though.
Hope this helps.
