I have found _Introduction to Imaging: Issues in Constructing an
Image Database_ by Howard Basser and Jennifer Trant to be very
enlightening. It covers such things as image capture and compression,
and has a full glossary. There are lots of illustrations of the effects
of different processes. It is published by the Getty Art History
Information Program, ISBN 0-89236-361-4 (they were being given away free
at ICOM in Norway, and may still be available as a public service.
