Ina May and Henci Goer's books are great.  I would also recommend Penny Simkin's The Birth Partner.  I do not know of books in French, though I should think that some of Michel Odent's books have been published in French.  There are some articles online in French at <http://midwiferytoday.com/international/french.asp>.  Here is the website for French doulas <http://www.doulas.info/>.  They may find more information there.
