We have this type of exhibit in our gallery.  What we used was a simple atomiser bottle in which we have concentrated oils (we got them from a fragrance company) that literally has hundreds of different scents which is used by people making homemade soap and candles.  The visitor uses a simple rubber button which when activated puts a little of the scent into the air through a small hole.  This way there is little smell that remains in the gallery and just really close to this exhibit.

My favorite smell bar was in Grossology where you got to smell stinky foot,
armpit, bad breath, and the big finale, anus.

Ours won't be nearly this spectacular.  You will be smelling plants from the
coastal sage scrub plant community of southern california.

I am looking for the best delivery system for the smells.
