My own experience of elimination diets - some foods (eg dairy) need to be 
eliminated for longer - eg a month, before considering a challenge - i.e. 
reintroducing them one at a time (our specialist suggested 3 serves in one 
day) to see what happens.  If it's anaphylaxis possibility it should be done 
under strict medical supervision where adrenaline can be administered and if 
need be oxygen/CPR.

Tiny amounts of dairy products are for example found in really weird 
places - breads, gravy, chicken stuffing, tinned/dried soups, processed 
meats like ham, you may be really surprised - so she needs to become a lot 
more knowledgeable to eliminate strictly.

Our experience of eczema via breastfeeding included dairy, tomatoes, corn, 
spices, anything citrus or with citric acid in, some food additives but we 
never really tracked down what. We never eliminated wheat until later down 
the track when the eczema hadn't gone completely then challenged with it and 
found he had coeliac - may have also been a problem with the eczema but 
coeliac doesn't list eczema as a  symptom.

Also home/daycare/nana's/car etc needs assessing for types of fabrics, wash 
powder/liquids, body soap/shampoo/creams etc, household cleaners, sunscreen, 
hot body, medications/etc, dust mites, allergies to animal fur. In our 
situation we first thought the skin was wet so dried it out with powder - 
worst we could have done as you need to feed eczema skin with moisturisers. 
We also found the eczema often didn't go away completely on it's own - it 
needed a small amount of hydrocortisone cream intervention to break the 
cycle.

Some research has shown increasing omega 3 fatty acids (most of us in the 
west are very deficient) can help skin conditions such as eczema and 
dermatitis - and even the oils applied externally can be of assistance. Do 
you think she might try this??

About the protein intake - does she eat any lentils/beans/nuts/etc. I think 
I'd be inclined to leave dairy til last to reintroduce.
