So agreeing with Jennifer's excellent info on EFA's.  Want to mention
one small thing though:

EPO and Borage (starflower) and the like are very  unbalance in terms of
omega six  oils which, as Jennifer said are already overrepresented in
the american diet.  The optimal ratio of 6's t o 3's is probably 1-4:1
instead of what is normally seen in a typical western diet: 29:1.

If one is using flax oil, like Jennifer said, it must be used w/in six
weeks of opening.  If it has any bitter sensation on the tongue at all,
it's rancid.  I find that it doesn't actually last six weeks, but more
like three.  Another option is to put it in the freezer for a slightly
longer life.  Flax can be added to warm food but is not ever used in
cooking.

If using the seeds and not wanting to grind them every day, then can be
stored ground,  in the freezer for a few days at a time.     If the
seeds have any bitter taste or stinging sensation on the tongue, they're
rancid.....

Nuts are a quick easy source of protein.....but as mentioned they are
all high in omega 6's and 9's, which need to be offset by more dietary
omega 3's.

there is much interesting reading on EFA's at mercola.com  as well as
fascinating info on protein from an evolutionary perspective.  Artemis
Simopolous's books are fascinating sources of Omega 3 info.  They're
meticulously researched, contain lots of abstracts and all of the
journal cites you could hope for.
