This is a complex issue.  THe human milk protein that caused apoptosis
(programmed cell death) in cancer cells was a folding variant.  The
researchers thought that perhaps the alpha lactalbumin refolds in the
infant stomach to the conformation that caused apoptosis.  We are just
beginning to scratch the surface of knowledge about multiple
conformations of proteins, and I only understood about half the
presentation at ILCA 2 years ago on this topic...
