I think you've never noticed it, that's all.  K271 is close enough to
central repertoire (closer than say K449) for a pianist to have it
memorised.

It is actually, in my experience, rare to see a concerto played from the
score, unless it's an unusual concerto - for two bassoons by Vivaldi for
example.
