ISEN-ASTC-L is a service of the Association of Science-Technology Centers
Incorporated, a worldwide network of science museums and related institutions.

We use a Graham Cracker because it's dry.  That way, the LN2 can hide in all
the spaces of the cracker and become immediately gaseous when it hits the
heat of the mouth.  Foods that hold more moisture could give the inside of
the mouth a freeze burn.  (we had a misguided demonstrator try this with a
peach many years ago.  It was...a mistake).

So, folks, we've heard about the variety of foods that people stick in LN2
then eat.  We've done cross-cultural culinary education.

I'm still looking for info from those of you who share LN2 frozen snacks
with the public.  I'd love to go back to my safety officer and tell her that
there are a dozen other reputable museums who do this, and how they keep the
public safe.

Some of our safety procedures on this:  Be sure the parents are present (for
minors).  Have them swallow their saliva.  Shake off the food before passing
it out.
