Can't help with references for your study area but there are remains of a
smallish 1830s salt works on remote Pacific Norfolk Island (British) -
basically two large salt water tanks cut into the calcareous rock right
next to the sea. I believe one for direct filling by the sea at high tides,
the other allowing evaporation. Next to the tanks was the 'Salt House' - a
stone structure which once contained a large copper tank and a large fire
box underneath. The smoke and steam were drawn off via a large squat
chimney at one end of the structure.
