Jeremy,

I think that agile development methods would work very well for exhibition
development, because there are many parallels to software development.
 Exhibition development is very iterative so agile fits much better then
waterfall (which is often the typical approach).  I would recommend finding
a workshop to teach you the basics.  I had read about agile development,
but I didn't fully appreciate its strengths and potential stumbling blocks
until I ran through a mock example.  I took a workshop at a serious games
conference that was very helpful.
