We have some animals here. The most formal part of the collection process is obtaining permits from Fish and Game/Wildlife. AZA accreditation has a lot of guidelines that can be found here: http://www.aza.org/uploadedFiles/Accreditation/AZA-Accreditation-Standards.pdf

As far as collection, it also really depends on what animals you are looking for as to how you'd go about with your policies. I'd be willing to help out if possible, most of the formal collection procedures really come down to finding a reliable source that isn't harvesting from wild populations that can't spare it and a good solid plan for housing and husbandry skills.
