        I make apple jelly on a regular basis, but don't use honey, in fact
I make orange, lemon and mint jelly. These are made the same way but add 1/3
Oranges or Lemons or a big bunch of mint. When you make the jelly, you have
to boil it for so long, you will lose all the goodness and flavour of the
honey anyway. Plus honey will froth like crazy and cloud the jelly. One of
the very few occasions when sugar is better :-((
 
        This is just my opinion I am open to any other suggestions.
