At least is the coop intensive market place of the Twin Cities Mn, organic honey is irrelevant. Local 
raw honey trumps organic these days IMO . 

Unless you are intending to sell to Whole Foods or some other national chain I'm not sure what's in it 
for the typical honey producer/packer.
