Hi Peter, I know for myself, I use 3 medium supers in Northern Ontario.
During my conversion from deeps to mediums, I over wintered hives with
without  a medium and deep, and it was more than enough for the bees to over
winter on.  I'm sure that for migratory beekeepers, it more an issue of
weight and size, get more colonies on the flatbed without compromising the
bees.  For myself, converting to medium is for the long run. I can handle a
deep box now, but when I'm older, it will be more of an 90 lbs and a medium
would average 40-50 lbs.  As well, having one standard frame size for the
whole apiary, and in overwintering, the bees have an more space to move from
frame to frame.  Using 3 med is a bit more expensive at first, but worth it.
