I love buckwheat honey.  

We used to buy some out of Manitoba that was 120mm.  We cut it with 9 
parts of white honey and it was still strong enough and dark enough for 
most people.

We made mead from it and surprise, surprise.  The honey looks like well-
used axle oil and smells like a hog barn, but the mead had a delicate floral 
aroma and taste that I still recall a decade later!
