What would be wrong with simply putting it into a mesh bag  for
spinning them dry?

Personally, I usually just drain it, then set the bowl with cappings
inside an empty super on top of my inner cover and let the bees clean
them up, but I only have a couple hives.  Fun to watch them burrowing
down into the wax...
