I am not sure what you are doing. If I understand correctly , you tasted
honey . Did you extracted it by removing the cappings ? Or did you just
extracted it from open cells ? You can harvest honey if all cells have
cappings and are CLOSED . The evaporating process is already DONE. When
cells are still open , one does not harvest unless you have the means to
check on the water percentage.As far as the rain goes , bees don't like to
get soaken and water might contaminate the stores. Wait for a pause in the
rain to check.
