Can't they really ? I see some Canadian packers
labelling honey origin with stickers added on original
labels to claim that their honey is not from China...
after having beeing caught with contaminated Chinese
honey.
And it seems to me that some European packers
(particulary in France) also specify the country of
origin.

So true, so true. But you are lucky to have european
customers already "taste educated".

I am so glad to read such thoughs. This is the only
way we can compete with foreign honeys from
"low-social protection" countries. And this is the
only way to ensure customers freedom to chose.
At my micro-scale level, I tried to implement a honey
track systeme available on the web for my customers.
Origin, process, quality criteria, working methodology
are easy to document. But I face one problem when
dealing with "mono-floral" analysis by pollen.
Difficult to find standards even for main flowers
(quel pourcentage de pollen doit-on retenir pour
certifier qu'un miel est majoritairement (quelle
majorité?) de tel type floral ou d'un autre). It seems
to me there are also many labelling abuses with floral
types.
