Klemperer gave a killer account of Symphony in 3 Movements for EMI. My
favorite Symphony of Psalms is the Shaw recording for RCA, done in the 60s,
but it hasn't been released on CD, as far as I know. As to the Symphony in
C, no performance really stands out. If money's a consideration, I'd go
with Stravinsky's recordings. His Symphony in C's as good as anyone's, and
the other two are quite fine. In all, they stand among his most successful
recordings.

For the early Symphony in Eb (written under Rimsky's supervision), I
recommend Dorati.
