This yeast discussion got me wondering what the actual name of the organism
is of "Brewer's yeast". As we all know, the usual yeasty pathogen is
Candida albicans. I know there are other pathogenic yeasts, but there must
be some that aren't. Anyway, the name of the yeast of Brewer's yeast
is Saccharomyces cerevisiae, and it is a natural source of protein and
B-complex vitamins, which are good things for our bodies to have. So maybe
not all yeasts are bad. There are many microorganisms which live in harmony
with us, after centuries of evolution.
